Vacation time!

Oh my goodness, this week has been exhausting.
Tomorrow morning The Family -parents, Jenny, Millie and I are going to PEI
for a week and a half.
We've been going shopping and have been packing all week...
well sort of.
I like to think that we have accomplished a lot more than we actually have.
I for one, have still got SO much to do.
Yes, I know, it's not good to leave things for the last minute...
but it's so hard not to!!!!

The cooking has been minimum this week,
actually i've only made supper twice, and my mom cooked the rest of the week.
It was a nice break to be able to just eat food without having to prepare anything,
but at the same time, I felt weird not cooking.

PEI is going to be so great,
we used to go there every summer when we were young,
but we started going less when Jenny and I got older.
This is going to be the first time I go there, while being a veggie,
so it'll be interesting to find stuff to eat!
My [food] memories of PEI are sea food and sweets from little
home bakeries.

In other news, I bought a cookbook yesterday.
All deserts, all chocolate, all french?
But it was 8$ so the fact that it is in french seems a little less terrible!

Oh and I also received my cupcake liners from Layer Cake Shop!
They are SOOOOOO cute and i'm so glad that I got them before leaving.

Now, it is time for me to go pack! (:

Chickpea and leek soup

Last night I was not in the mood to spend more than 10-15 minutes
preparing supper so I decided to put together a veggie soup.
I love, love, LOVE soup. It's so easy to make using whatever
veggies you have in the house, it's quick, and you can just leave
it simmering away while you go do more important things.





Chickpea and Leek Soup


2 large carrots, diced
2 stalks of celery, diced
2-3 cloves garlic, minced (optional)
salt and pepper to taste
3 bunches of leeks, sliced
6 cups of vegetable broth, plus more if needed
(I used 6 cups veg broth, and about 2 more cups water)
1-2 tablespoons soy sauce
2 cans of chickpeas, drained and rinsed
1-2 tsp chipotle powder, or to taste (optional)

Heat a large pot over medium-high heat. Add enough olive oil to coat the bottom of the pan, add the carrots, celery and garlic. (you can use water instead of the olive oil - enough to keep the veggies from sticking to the bottom of the pan). Cook vegetables until they become fragrant, about 3-5 minutes. Add leeks, salt,pepper and chipotle powder(if using), stir and cook for another 2 minutes.

Add the vegetable broth (and water if using) and the soy sauce. There should be enough liquid to cover all the veggies, you can add more liquid if needed.

Add the chickpeas.

Bring to a boil, then reduce heat and let simmer until vegetables are tender,
about 15-20 minutes.

Adjust seasoning, and serve!

Sweet!

I've surprisingly been keeping myself busy considering the fact that
I haven't really left my house in the past couple of weeks.
I've been baking, I've been re-arranging my books and such,
cutting my hair and going shopping for some summer clothes.

Although I HATE not having a job (because of lack of money)
it is kind of nice to have no responsibilities, and no where that
I absolutely have to be.

Plus, I'm a big optimist (and slightly lazy), so I've always been
confident that opportunities will fall in my lap. haha
Now that doesn't always play out the way I would hope,
but a couple of days ago the Boyfriend told me that one of
his classmates would buy cupcakes from me for one dollar a piece. (;
He's going to try out just chocolate and vanilla ones first,
and if he likes them (is that even a question?) he will try different kinds
and get more. (: WOOHOOO!!
So tomorrow will be cupcake baking day....
again...
yes, I made more cupcakes this week,
plain old vanilla, but with chocolate and plain cream cheese frosting
inspired from the recipe in Vegan Cupcakes Take Over The World.
YUMMMMM!!! Best ones so far!






While on the subject of sweet things,
I made Veganyumyum's killer pancakes
with a twist this morning for Jenny and I.
I made some blueberry ones, chocolate chip ones, and cinnamon ones.
SOOOOO goood!!

Summer, Work, Bake sale?

Summer here, has not really been all that great so far,
the weather has been humid and rainy
and with our still fairly new puppy (about 8 months old)
we haven't had time to go out and do very much.
Not to mention the fact that we're both unemployed.
(I was SUPPOSED to have a job, but you know how employers are,
soooooo unreliable!)

Solution: we are going to have a bake sale
...a traveling bake sale. (:

Right now, this is just an idea that still needs to
be formed and planned and finally executed.

We thought it would be a lot of fun to spend time together
cooking up some tasty vegan treats, and then selling them
of course, to make a little bit of money (;

Our parents are having a garage sale sometime soon,
so our bake sale will start there,
and then move to other places around town.

I'm really excited to plan all of this,
(especially the part about testing out a bunch of recipes)
and to see people's reactions to VEGAN sweets.
-I'm sure there will be a lot of skeptical people

In other news,
I've been practicing photographing food, animals and people,
(unfortunately not with a spiffy high grade camera)
so I can start getting some scrap books and such together (:

Welcome to our blog, "The Uneven Vegan Dolls" !

We are too sisters, Lindsay (vegetarian of one and a half years) and Jenny (failed veg who is trying again) who aim to post proof that going vegan is easy to do; so easy that it can happen without you even realizing it.

Seriously - true story.

We (well mostly Lindsay) started making vegan suppers for ourselves and our omni- parents a few months ago after stumbling across Susan's blog "The Fat Free Vegan Kitchen". After looking at only a couple of her easy recipes and gorgeous pictures- we were sold. But what really closed the deal, was the fact that the food tasted even better than it looked in her pictures (if that's even possible). Since then, we (again-mostly Lindsay) have been cooking healthy and cruelty-free suppers every night- with no complaints of lack of meat.

Pretty good, right?

But enough about us! Let's celebrate the opening of this blog with ...*drum roll*...
CUPCAKES!!! Yes, cupcakes.
